The Macallan introduces its latest expression focused on sustainability and rich cocoa flavor

If there’s another food and drink pairing people have to try, it’s whiskey and chocolate. Both are bold and complement each other so well that once people have tasted them, they always ask for their whiskey on the rocks with a side of dark chocolate. Needless to say, this pairing is the perfect nightcap. This fusion is the raison d’être of The Macallan’s latest collection, the fusion of its famous whiskey with distinct cocoa flavors.

Last February, the luxury single malt Scotch whiskey label launched The Macallan Harmony Collection Rich Cocoa, the first limited-edition whiskey in an innovative new series of single malts that will see the brand progress on its journey towards sustainable packaging, which fuses innovative techniques with materials. from the natural world at the end of their lives to see them reborn with renewed purpose. The mastermind behind its new expression is the brand’s whiskey master, Polly Logan, who collaborated with world-renowned pastry chef, Jordi Roca, to explore the chocolate-making process and infuse whiskey with flavor notes of chocolate.

“The Macallan Harmony Collection Rich Cacao is a wonderful expression that brings together the world of whiskey with the fascinating world of chocolate. Working in collaboration with Jordi Roca, recognized as one of the best and most creative pastry chefs in the world, and with the exceptional chocolatier Damian Allsop, I embarked on a journey of discovery, learning the know-how, the passion and creativity that goes into making chocolate,” said Polly.

“For this expression, I looked for a specific chocolate note in The Macallan’s traditional sherry-seasoned European oak barrels and combined that with a vanilla note imparted by sherry-seasoned American oak barrels to sweeten the slightly bitter chocolate note that I had found,” she continued. . “This exquisite single malt offers a delightful pairing experience of whiskey and chocolate and the opportunity to elevate The Macallan experience to a new dimension.”

“Our collaboration with The Macallan allows us to challenge our own creativity, and in this project we have been allowed to play with cocoa, which is one of my passions,” added Jordi. “Being able to inspire a whiskey and create a unique tasting experience has been wonderful.”

To showcase it in the Philippines, The Macallan hosted an intimate event for Filipino media and culinary masters with an exciting five-course dinner at Gallery By Chele. Chef Chele Gonzalez and his culinary team have crafted the finest feast that also celebrates sustainability and Filipino flavors and pairs them with cocktails featuring The Macallan’s expressions.

Dinner started with a ceviche served in a cocoa shell and a cocoa-dusted oyster with coffee, coconut and diced apples, accompanied by a glass of Whiskey Sour made from The Macallan Double Cask 12 Years Old. The cocktail brought zest to every sip which complemented the fresh seafood wrapped in creamy coconut milk. Continuing the feast of flavors, the main courses were Iberico with mushroom rice risotto and grilled filet mignon. The latter came with an Old Fashioned made with the same expression The Macallan. For dessert, a taste of tradition and classic thanks to the signature of the restaurant bibingka cheesecake and chocolate soufflé.

Dinner is enveloped by the nose and tasting of The Macallan Harmony Collection Rich Cocoa. To further underscore the sustainability goal of chocolate expression and taste, the brand partnered with internationally award-winning Filipino chocolate company Auro Chocolate, which served chocolate candy, a dark chocolate candy with white chocolate ganache with citrus elements inside, for whiskey ritual. Smelling the expression alone, one could get hints of chocolate, honey, oak, ginger, and lime. On the palate, the chocolate experience continued with notes of dates, vanilla and cinnamon lingering on the taste buds.
