Near Rollertown Beerworks and Little Wooden Penguin in the northern suburb of Celina, D-FW, the long dormant silo towers and building are being redeveloped into a whiskey and wine bar and restaurant. The Silos will open in early spring 2022.
In front of a cluster of unused grain silo towers, the concept will transform the old silo building into an upscale lounge, and a new building is being constructed for the restaurant. The two structures will be divided by a huge patio for outdoor seating. For larger groups, The Silos also offers cabanas for rent along one corner of the property.
Silos chief operating officer Eric Harnett said opening in Celina, where the population has grown exponentially for a decade, is a no-brainer.
“If you go up the toll, it’s very uneven,” says Harnett, a photographer who owns Destinations Wine Bar in Fairview, which closed in March 2021. “But you know where downtown Addison is. , and you can find a good place to eat there pretty quick. You know where Legacy West is, and you know where The Star in Frisco is. Well, Celina is next in line.
Owner Michael Arani, who bought the property in 2015, says the menu will be simple, with brick-oven pizzas, burgers, tacos and charcuterie boards. He says the structures are “about a hundred years old” and the silos will be designed to “try to retain that industrial rustic look.” He could possibly renovate the towers for private parties.
Harnett also plans to have an educational component at The Silos, with classes on making beers, spirits and wines. “I’ve always joked that if it’s education, you don’t drink,” he says. “So if we’re having a whiskey, vodka, margarita or wine class, it’s an educational place. And I like to educate.
The silos are located at 300 N. Oklahoma Drive and are expected to open in early spring 2022.
